Every time we get a chance to stop in at a Whole Foods, we always make sure to pick up a power cookie. Now if you're like us, and don't have the luxury to conveniently shop at one, today's your lucky day! I came across this recipe online and knew I had to give it a try. If you haven't had a power cookie yet, they are so good! They are like chocolate chip cookies, but healthier because of all the goodies involved!
I actually double this recipe and I end up with about six dozen cookies, which sounds like a lot, but they freeze quite well. I also used whole wheat flour instead of spelt. And depending on how you like your cookies, I found I needed to bake them a little longer. They get this golden brown outer layer and soft, chewy texture.
